酉前嚴選精選臺灣本土溫體黑毛豬的軟排部位,遵循私廚配方慢火精燉,每一塊產量稀少的豬軟排經過時光的淬煉,閃耀著焦糖色的飽滿光澤;一口咬下豬肉的彈嫩,再來是煮到酥脆的軟骨,肉質多汁而不鬆散,彈牙而不發柴,與香脆的軟骨結合出齒頰留香的甜味;嫩、脆、甘、鮮,豐富的口感層層遞進,迸發出充滿回憶的小宇宙。 

遵循米其林星廚的改良配方,酉前嚴選運用高品質豚骨與大量蔬果作為湯底燉煮,讓豬軟排充分吸收蔬果的鮮甜,醞釀更濃郁的香氣。大量手工淘選的新鮮蔬果,無論是番茄的酸甜,紅蘿蔔的鮮味,或大蔥的辛爽,都經過繁複的前置作業,再融合獨門的香料配方,與豚骨一起緩慢燉煮,彷佛將父母盼著孩子回家的心情,點點滴滴熬進這鍋湯底;以耐心與匠心,緩慢成就一鍋承載了思念的豬軟排湯。
